Produced by Rosimeire Aparecida Guerra, this coffee is processed as a natural in the Brazilian region of Mantiqueira in Minas Gerais.

Rosimeire is a producer we began working with in 2019. Her farm is called Sítio Vargem Grande and is in immaculate condition. She experiments with different fermentation and drying methods.

Sitio Vargem Grande located near Lourdes Fatima 's farm, Sitio São Pedro. Lourdes is another producer we have been sourcing coffee from and is Rosimeire’s mother in law.

The harvest usually takes place from June to September with the peak
being in July. Cherries for this lot have been manually picked. This lot is processed as a natural and drying takes place in a drying box.

During the fermentation process they monitor the sugar content of the cherries (Brics), the temperature (which should not exceed 38 degrees),
and the PH levels.
